Can a company garnish your pay if you did not sign a wage assignment?

The terms of wage assignment needs to be clearly mentioned in the contract before passing the loan. If the company intends to deduct from your payroll on default, the wage assignment clause should be clearly explained to the customer and giving him the rights to revoke it. Without your signature, the company has no legal rights to deduct from your payroll.
