Since we have all been talking about food, I thought I would start a thread where we can all share recipes. Here is one I was talking about in the dinner post. I made it the other night and it was SOOO good that I'm going to make it again this weekend. It came out of my mom's Kraft cookbook from 1971!!!

Sicilian Supper Casserole

1 lb. ground beef
1/2 c. chopped onion
1 6 oz. can tomato paste
3/4 c, water
1/2 tsp. salt
1/4 tsp. pepper
3/4 c, milk
1 8 oz. cream cheese, cubed
1/2 c. grated Parmesan cheese
1/2 c, chopped green pepper
1/2 tsp. garlic salt
2 cups noodles, cooked and drained

Heat oven to 350. Brown meat, and drain. Add onion, cook until tender. Add tomato paste, water and seasonings, simmer 5 min. Heat milk and cream cheese over low heat, stirring until smooth. Stir in 1/4 c, Parmesan cheese, green pepper, garlic salt, and noodles. In a 1 1/2 quart casserole, layer half the noodle mixture and meat sauce. Repeat layers. Bake at 350 20 minutes. Sprinkle with remaining parmesan cheese. Serves 6.


Yummy Morning or u can add cooked rice also, and it's kinda like fried rice! (have to leave a little of the oil from ground beef)
ANd Sass, i LOVE lasagne, go figure, huh? Now that ya mention it, this DOES sound a LOT like lasagne! Am gonna make that over the weekend too! :D

This is one of my families favorites.

Tacos in Pasta Shells

1-1/4 lb. ground beef
One 3oz. pkg cream cheese with chives
1 tsp. salt
1 tsp. chili powder
18 uncooked jumbo pasta shells, cooked, drained & rinsed.
2 Tbsp. butter, melted
1 c. taco sauce - I add more
2 cups shredded cheddar cheese
1-1/2 cup crushed tortilla chips
1 c. sour cream
3 green onions, chopped

cook beef in large skillet and drain. Lower heat to medium low and add cream cheese, salt and chili powder; simmer 5 minutes. Toss pasta shells with butter; fill with beef mixture. Arrange shells in 13x9 pan. Pour taco sauce over each shell. Cover with foil and bake in preheated 350 deg. oven for 10 minutes. Uncover; top with cheddar cheese and chips and back for 15 minutes more or until bubbly. top with sour cream and onions. May garnish with lettuce, olives, tomatoes or anything else you like on your tacos.

Ok..Here's something cheap and easy that my boy will eat..

POP UP PIZZA

3 tubes refridgerated buttermilk bisquit
1 jar spagetti sauce
2 cups shredded cheese(or more if you're a cheese freak)
pizza toppings..pepperoni. mushrooms, onion..The more toppings you use the better this is

Pre-heat oven to 350. Spray a 9x13 glass pan. Take one can of the bisquits and half of another and cut each circle into 4ths. Lay the pieces on the bottom of the pan..The bottom will not be completely covered. Mix sauce and pizza toppings in a bowl. If you're using pepperoni, it works best to cut each slice in half. Put half of the sauce/topping mix on top of bisquits in pan. Cover with half of cheese. Repeat with remaining bisquits, sauce and cheese. Bake for 30 minutes.

OMG..this bubbles up and is so good!! And very cheap to make.

I know what you mean..between running kids to 4H meetings this time of year..getting ready for the fairs, karate lessons and horseback riding lessons, I barely have time to cook. I try to make a couple of good meals a week with enough for leftovers. When I do the kids are sooo happy. Makes me sound like a bad mom huh?

nah...back when my kids were younger...we had so much to do all the time...and as a single mom I worked 2 jobs for almost 6 years...I was off both jobs on wed. and sun....so one day I week I would cook 3 or 4 different things and freeze them in small quantities...that way during the week I could just pop stuff into the microwave...we rarely ate what I cooked on the day I cooked it...LOL.

I did the taco salad last night. I used Catalina dressing cause hubby didn't want the zesty Italian, and I also used black beans instead of kidney beans. We crushed Doritos up and put the salad on top of them. I also used 2 bags of cheese instead of one. It was SOOOOOOO good. Except picky a$$ stepdaughter didn't like it because "I don't like lettuce or beans...." whatever. She had an egg sandwich instead. Ang I'm glad you liked that. That is what they want me to make for dinner today.

Ya know Sass... btw G'Morninnnnnnnnnn SASSY PANTS! ;) I thought about using black beans too! We also used tostidos chips in it. Was a huge hit!
And also ur recipe, they LOVED!!! It was very much like lasagne and i cooked the meat with paste for a longggggggggg time, almost all day! It was AWESOME to say the least!

Good Morning Ang!!!!!! I am glad everyone liked that recipe. I can't wait to make it again today. Hubby is eating leftover taco salad for breakfast as we speak!!!!! I'm not a big fan of kidney beans and hubby suggested the black beans.....I think they are lower in fat also.........it was really good that way.

Well go figure we DO think alike! lol I thought of it but didn't use em, next time i will and hubby ate the leftovers from the salad for lunch yesterday! I alos made another pineapple upside down cake, they love it! and it's SO easy to make!

Now how about an SUPER easy desert..

Chocolate Eclair Torte

2 pkg. (3oz. each) vanilla instant pudding
1 box graham crackers (honey grahams)
1 (8oz. tub Cool Whip)
1 can ready spread chocolate frosting

mix pudding as directed. Add Cool Whip and mix together thoroughly. Layer a 9x13" pan with graham crackers, broken in squares. Add a layer of pudding mixture, then another layer of graham crackers and another layer of pudding mixture, then crackers. Refrigerate for 2 hours, then put frosting on tip. Might want to soften frosting in microwave. Refrigerate 24 hours and serve.

So easy and so good.

I have this recipe and it is AWESOME! Only thing different is i use the chocolate that hardens for topping. Ya know the one for ice cream?? It's creamy then hardens on top once it sets! Oopps and also, i use the "French" vanilla instead of original vanilla.
This is SO easy and DELICIOUS!

OMG Sass!! The request for dinner tonight is the SAME recipe i cooked yesterday! ha ha They're ALL disappointed that we have no left overs! And my family hardly EVER will eat leftovers! This is too funny that i'm gonna cook the same meal 2 days in a row! ha ha

That's funny cause I was just telling Dave I could eat that taco salad again for dinner, too!!! I guess you and I are having the same thing for dinner today!!!!! :):) Stacy wasnt here when I made the lasagna stuff so she wants that for dinner today. I am making a double batch so I am sure to have leftovers for lunch tomorrow if I am lucky!! :) Tuesday I will make the taco pasta shells.

Ok here a recipe for u Sassy Pants!

Nacho Bake:

1 pkg Velveeta shells & Cheese Dinner
1 lb groud beef
1 pkg Taco seasoning mix
3/4 cup water
3/4 cup Sour cream
3/4 cup shredded cheese (any kind u like)
3/4 cup salsa
1/2 cup coarsely crushed tortilla chips

1. Prehat oven to 400 F. Prepare dinner following basic directions. While pasta is cooking brown ground beef; drain, add taco seasoning mix and water to meat; simmer 5 mins
2. Stire sour cream into prepared dinner. Spoon half of the dinner mixture into 8 inch square baking dish; top with layers of the meat mixture, half of the cheese and the remaining dinner mixture. Cover.
3. Bake 15 minutes; top with salsa, remaining cheese and the crushed tortilla chips. Bake, uncovered an additional 5 mins.
Makes 6 servings and is YUMMICILOUS!

Ok, so i cooked Sass' recipe again today! ha ha IT was even better today! I added a few extras in it, trying to make it a little different! Everyone again loved it! That is SO simple yet so good!
And btw... the recipe i posted is from the back of the Velveeta mac n cheese box! ha ha But it's VERY good!!
Looks like a lot of us like Mexican too! But i was always looking for something to make with ground turkey and now i have loads!

Since I have not been on in a while, I am way behind, but everything sounds good. Will definitly have to try some.

One real quick dish we make is with Polish sausage or Kabaska and either Augratan or Scalloped potatoes.

I use 2 boxes of potatoes
Mix as directed on box
Then cut up your Kabaska or sausuage, I usually but slice it (circles) and then cut it in 1/2 again.
Add to the potatoes and cook as directed on the box.

Quick, easy and all in one dish! We very seldom have any leftovers

Cheesy Chicken Encilada

1 lb boneless chicken ****, chopped
1 jar salsa, divided
1 pkg. Kraft Mexican Style Shredded 4 cheese Blend, divided
10 flour tortillas

SPRAY skillet with Pam. Add chicken, cook on medium heat until cooked thorough. Stir in ???? cup salsa and 1 cup cheese.

SPREAD 1 cup salsa in 13 x 9 baking dish. Place ???? cup chicken mixture down center of each tortilla, roll up. Place tortillas, seam side down, on salsa. Top with remaining ???? cup salsa and 1 cup cheese.

BAKE at 350 degrees F for 20 to 25 minutes or until thoroughly heated.

Bon' appetite!

Chicken N Peppers Pasta Skillet

1 lb boneless chicken breasts, chopped
1 green pepper, cut into thin strips
1 small onion, cut into thin wedges
1 jar (14oz) spaghetti sauce
2 cups rotini, cooked, drained
1 pkg Kraft Italian Style Shredded Cheese, divided

COOK chicken in large skillet sprayed with Pam, 5 minutes. Add green pepper and onion; cook until chicken is cooked through and vegetables are tender.

STIR in sauce, rotini and 1 cup of the cheese. Sprinkle with remaining 1 cup cheese, cover. Let stand 1 or 2 minutes or until cheese is melted

The tacos in pasta and the sicilian casserole sound great...will def. have to try.

Easy alfredo sauce:

Equal parts heavy whipping cream and sour cream.
Heat and stir.
Add parmesan cheese and pepper to taste.
Serve over noodles and stuff.

Good with grilled chicken, asparagus and stuff.

Easy choc. mousse:

1 14-oz can Sweetened Condensed Milk
1 4-serving size chocolate pudding mix
1 Cup cold water
1 Cup whipping cream, whipped in large mixer bowl

Beat sweetened condensed milk, pudding mix and water; chill 5 minutes.

Fold in whipped cream.

Thanks Morningstar, I am always trying out new alfredo recipes. Haven't found the perfect one yet. I will try this one next!

I haven't tried the taco pasta shells yet because of a busy week but I want to very soon. Let me know if anyone tries them. The sicilian casserole is so good and very easy!

Thanks for the new recipes Ang and Morningstar! I hope some more people post some recipes, too. I have loved trying this stuff out!

Yet another mac n cheese recipe especially for our "Guest"! lol
Cheesy Chicken Skillet

1lb boneless chicken breast, cubed
1 pkg. (12 oz.) Velveeta shells & cheese dinner
1 cup milk
1 cup water
1 cup broccoli florets
1 cup sliced carrots

SPRAY large skiller with Pam (i always use olive oil). Add chicken, cook on medium high heat 5 mins or until chicken is cooked through, stirring occasionaly.

ADD shell pasta, milk and water, stir. Bring to a boil. Reduce heat to medium low; cover. Simmer 10 mins. Add broccoli and carrots, cover. Continue cooking 5 mins. Remove from heat.

STIR in Velveeta cheese sauce until well blended.

Makes 4 servings and is easy to make!

I made two of my kids favorite things yesterday...easy summer stuff you can keep in the fridge for a few days:

Tuna Salad:
Toss and Mix

Cooked macaroni
Chopped onion
Halved black olives
precooked and chilled green peas
chopped celery
4 cans of water packed tuna
(can also use chicken or shrimp)
Toss in a bowl with mayo,parmesan cheese, salt and pepper to taste
Chill before serving
(we also serve this with cubed pineapple on the side..)

Quick Fruit Salad...for desert or snacks
Cube or cut up
apples, peaches,kiwi,pears,strawberries,melon and sliced bananna
all in a big bowl add 1/2 cup of your favorite juice (we use orange) and let set overnight in the fridge..

We had the fruit for desert yesterday after the tuna salad and I ate it again this morning for breakfast.

SWEET AND SOUR GROUND BEEF SKILLET

Because you use frozen vegetables and canned pineapple, there is no chopping or mincing of any ingredient. The whole dish can be prepared in about 20 minutes.

INGREDIENTS:

* 1 lb. lean ground beef
* 1 lb. pkg. frozen broccoli and carrots
* 1 Tbsp. brown sugar
* 1/2 tsp. ginger
* 2 cloves garlic, minced
* 1/8 tsp. pepper
* 8 oz. can pineapple tidbits, drained, reserving juice
* 2 Tbsp. soy sauce
* 1 Tbsp. apple cider vinegar
* 1 Tbsp. sugar
* 1 Tbsp. cornstarch
* 3 Tbsp. water

PREPARATION:
Brown ground beef in large skillet, then drain. Add vegetables, brown sugar, ginger, garlic, pepper, reserved pineapple juice, soy sauce, and vinegar and stir well. Bring to a boil. Reduce heat and cover skillet; simmer for 6 minutes until vegetables are crisp tender. Add pineapple and stir.

Combine cornstarch and water in small bowl and stir until smooth. Add to skillet; cook and stir until sauce thickens and boils. Serve over rice or noodles. 4 servings
