No they don't normally keep records of all your in go and out go
No they don't normally keep records of all your in go and out go, however when you file they will ask for copies of pay stubs, bank accounts and tax returns.
The 341 is a meeting basically that you have with the trustee, it takes all of about 10 mins, they ask you basic questions, name, address etc. The 341 is really the "meeting of creditors" however normally no creditors show up. They can if they want, normally its not worth their time and money.

I just filed the Chap. 13 Papers yesterday. I was asked how much cash I had on hand when I filed & the amount in the bank. I was not asked to provide any bank statements for the filing. I did provide copies of the last 60 days of income.
My attorney advised the 341 Meeting is to meet with the Trustee & discuss why/reasons for filing and for her to "ok" the plan. Creditors are given the information & can attend if they wish.
