That's a toughie, but, you did state in the ad 'ship only to the U.S.', unfortunately you bypassed that when you accepted her moeny anyway, even though you refunded her. So, what does she intend on doing, coming all the way to the U.S. to sue you, because I believe that's what she'll need to do. Does she have your address? If I were you, I would wait until you receive something in the mail more concrete, maybe she is only trying to scare you into selling the rings, this is just my best guess, I honestly don't know for sure. Keep checking back for more replies.

Was it paypal automaticcally billing her or did you bill her? If she just automatically sent the money, she would be in violation of your terms.
She could sue you in Australia but that judgement would have no affect here. Thinks she is blowing steam.

I'm guessing she is angry because she "won" the rings for an attractive price and thought she pulled on over on you.
Do not communicate with her any other way except through eBay messages.
Check eBay for their dispute resolution policy.
If she paid through Paypal she or you can file a dispute through Paypal.
BUT be careful. Paypal will put a hold on your account for the disputed amount. If you have money in your Paypal account get it out of there. Also close or deactivate the checking/credit account you have tied to your Paypal account. Since you returned the money to her...they may not...but don't take any chances until this is resolved.
I had an eBay customer dispute an item I sold her. I had good records including emails and pictures and I had asked her for pictures of the shipping materials for the insurance which she provided. Paypal decided in my favor and released the funds.
Keep all of your emails to and from her to submit if necessary. If she made the automatic payment without first contacting you I don't think you'll have any trouble. Keep the tone of your emails courteous and to the point. Just ignore her threats, they will count against her.
By the way you can block her from bidding on any future auctions you post.

How mush is the money involved? You can use the reason that she is outside US and not confident enough to send the item overseas.
