I emailed a C&D letter and I received a email from them for me to review the loan documents which states the laws govering this loan are the laws of Nevis. What should I do?

Yeah, and that makes them illegal in USA. Does you state allow overseas lenders to offer loan in your state? If not then they are illegal. You can check the internet lending laws of your state from the following thread.
