I have 3 payday loans.
ACE - $900 I owe $1107.42
MyCashNow - $1000.00 I owe 1415.08
PayDay One is a subsidiary of ThinkCash, Inc. - $1000.00 I owe $1231.58
I live in Texas and am falling further and further behind. I have thought about closing my account with Chase. What should I do? Any help would be very much appreciated.

Mycashnow isn't licensed to lend in your state, you have more than paid them off. If your other lender is Ace Cash Services they aren't licensed either. Payday one is your only licensed lender, you need to make payment arrangements with them, request an EPP (extended payment plan) for Payday One. You have more than paid off the other two, you need to close your account asap and contact Paydayone to let them know you will need to make payments in the form of a money order via the mail, tell them your account was compromised and you had to close it, then CLICK HERE to find out how to deal with illegal lenders.

Once I close my account do I need to send a cease and desist letter? What should it say?
Can I get them to not call my work and references?

All of your questions will be answered HERE. First close your account, then send letters, a template is in the thread above, you will need to tailor it to your needs.
