i was wondering what would happen if i received a credit card when i was under 18 and didn't end up paying it off and now being 21 they are trying to take me to court for it. what can i do or say to get out of it?

It is not illegal to enter into a contract with a minor....minors can enter contracts and can be held responsible for certain contracts.

That being said, you can only use the minor defense if you repudiate the contract when you reached the age of majority. That means when you turned 18, to would have had to notify them that you were a minor and that the debt needs to be set aside.
