My uncle just called me and wants me to make this meatloaf that I've made for years...He got all the stuff for it today, and I'm going to put it together tonight when I get home and he's going to put it in the oven tomorrow. I got the recipe is some magazine about 7 years ago, and it's so yummy. :) Kinda mexicanny flavored with salsa and stuff..


Hacienda Meatloaf

14 ½ oz can diced tomatoes with green chiles

2 eggs

1t salt

Mix all that together and then add...
½ c cooked, crushed tortillas (this would replace the breadcrumbs that typical meatloaf would call for)

8 oz corn--I use frozen, but an 8 oz can would work too...

½ c sliced green onions

1t each ground cumin and minced garlic (this gives it a bit of a taco-ey flavor..you can also use taco seasoning if you prefer a stronger flavor)

2 lbs gound beef or turkey

Mix together.

Put in loaf pan and top with bottled salsa.

Bake 55 minutes at 400 degrees.

Serve with rice and/or refried beans

I'm so excited..This is like my favorite food of all time..lol


Another good one, is this spaghetti we make...We just call it baked spaghetti...

We take spaghetti, then spaghetti sauce, which we cook bacon instead of beef with it, and onions, then we put it all in a casserole and bake it with a whole bunch of cheese. Yummy...:)

Ok, so at work I've been eating canned soup for lunch instead of my typical chicken fingers from Dairy Queen, or burrito from Chipotle...So I've been a little "hungry". I eat like a hog when I get home though...lol

ok guys, give me your opinion..while on the subject, how does this sound for dinner tonight?..I sliced up some sizzlers last night and marinated them in garlic and olive oil with mushrooms overnight. Tonight I will flash cook them, add more olive oil and garlic and chopped fresh tomatoes along with other spices to make a semi-thick sauce, add some fresh parmesan cheese, and put it over penne pasta, garlic bread on the side? Sound good? It's fun, in order to save money I try to invent "gourmet" meals. What do you think, will this go over well with my husband?
