Use the instructions given at this link on how to record the phone calls. Once the calls have been recorded, you will be able to listen it after logging in the forums and after getting your user id.
Know the laws in your state before recording the phone calls. Some states require permission from both the parties whereas some require permission from one party only. You can confirm yourself from the consumer protections office in your state.

If your state does not allow one party consent while conversation recording, tell them the call is being recorded. If they continue talking, it means they agreed to it. Follow the link mentioned by John and get it recorded.

I believe i requested that they don not call me anymoe and that all communication must be in writing. Anyway, I've opted not to call at all if I can help it.

Since they were not licensed in my state, I sent them a similar letter and gave them thirty days to respond. They did not so I removed them from T &C. If they ever contact me again, then I am going to file so many complaints against them that it will make their little heads spin. :x Also, if you sent them a letter stating not to call you at home or work, file a complaint against them with the better business bureau and the consumer protection office in your state as well as the one they are located in. That will get them to shut up. :P
