I know when I last paid my old credit cards. How do I prove when I last paid them? It is my guess the JDB will argue with me and show a fake payment. How do I proove them wrong if they do that?

Evidence is testimony under oath. They'll have to provide a witness who can authenticate whatever documents they seek to introduce. You can do the same thing for yourself. Bring in your cancelled checks or bank statements and testify about them. You can also rebut the documentation they provide, by showing that the documents are false or fabricated.
