does anyone know of a company or website that lets you start and finalize your loan by submission of your info online and/or via U.S. mail? I hate that I have to give a phone number because they will start to call non-stop and it drives me crazy!!

Do some online researching about the companies and check their business with the BBB. A legitimate will not have consumer complaints against them. If due to some reasons, a complaint is submitted, they will take the shortest time to resolve the matter.
Besides, all the major companies doing legitimate business are listed with the state attorney general office. You can have a look there too. It will a great help for you. It's better to deal with a local company physically available than a company located outside the state.
