Has anyone ever banked with this particular credit union? Or even banked at a credit union at all?
Seems that I'm trying to work things out to where I'm not being nickel & dimed to death from payday lenders and since it's illegal in our state for them to charge me what I've loaned I've waited for the amount to be taken out of our account and I want to put a hard hold/freeze on any and all ACH debits from our account but according to Veridian they've never heard of such a thing so therefore they can't do it. Is this correct?

I haven't heard of a bank that can't put ACH block on an account. I'd suggest you to speak to the manager directly to explain your situation. Hopefully it'd solve the problem.
