I disputed an item on my credit report in mid December directly through Experian. About two weeks later I received notice that it was removed and a new copy of my report that didn't include the account. About a month later I received a summons from an attorney and the creditor for the amount shown on the credit bureau.
Is their removal of the item proof that they can't verify that I owe them anything? Can this be used in court as proof I don't owe anything?

If they can't validate with the credit bureaus then they probably won't be able to validate in court. The best thing to do is to motion to show cause during discovery, in this motion you should request validation documents (you can find a validation letter in my signature which will give you a good idea of what to request) once they fail to show cause you should motion to dismiss with prejudice.
