LTD financial offer letter

Hi I received settlement offer letter from LTD financial but due date is 11/30/12. If I mail a settlement check(or cashier check) by certified mail, can I use mailed date as evidence in future? or they have to receive by 11/30. I am worried that they will say payment received after due date and does not honor the settlement.
