500 Fast Cash problems

I have posted here a few times about my dealings with Cash Call. Now I have a new question. In total I had 7 loans when I found this site. Ameriloan, United Cash Loans, 500 Fast Cash, Extrafunds, My Cash Now, Plain Green Loans and Cash Call. I sent letters to all of them saying I would pay the principal balance on my own dates and terms. Everyone emailed me back(except Cash Call and 500 FC). They all set up arrangements and were easy to deal with. Today I received a call from 500 FC. I only answered because I didn't recognize the number.
The woman I spoke to was pretty nice but told me I owed over 1200. I borrowed 750. I explained I emailed letters that the loans were illegal and I would only pay the principal. She said I needed to pay my debt including the interest. I finally said I will pay the principal on the original dates I noted in my letter and that's it. Why is this company being so difficult when the others were easy? She gave me a fax number and asked me to fax the letter because they never received it. Should I fax the letter even though I emailed it twice?
500 fast cash has never responded to me either
I think that they think if they ignore your letters and then call you weeks or months later, you will just pay what they think you owe. I have had trouble with United Cash Loans which is owned by the same company/tribal lender.
As bingonut stated stick to your guns. They know they have no legal recourse to get the exorbitant interest they want do they are trying to be sneaky.

So I posted my ramble about 500 FC and today I got a call from a similar number for United Cash Loans saying I owe 670.00. I explained to the man that I already had an arrangement to pay in January for the principal only which is 235.00 He told me I legally owed the 670.00. I hung up on him.
So, the arrangement I made with UCL last month all through email was all set. They accepted my principal only. I was told I had to call to give my prepay number in January since they couldn't take it online and I would be all set. They would no longer call. So tonight I broke the rules and called UCL the agent told me I had to email or fax the compliance department. She wouldn't give me a phone number. She said she could no longer see my account and had no knowledge of a settlement.
She asked me if the people who called sounded foreign and I said no. No threats or anything yet. So now what? I thought I was all set with them.

They started calling right away
I have never gotten anything in writing by e-mail or snail mail. The phone calls, however, started right away and occurred every work morning to my work phone between 8:30 and 8:45 am. In Washington State no pay day loan company is allowed to call a borrowers place of work however. I just ignored the calls as they were just once a day. After three to four weeks they stopped calling.
My company is fairly large and we have an automated system for human resources. I did not give my supervisors name and the only other phone number besides my direct line they have is the automated system. I may have lucked out because of this.
If you have a switch board or receptionist don't forget to tell them you are a victim of fraud so they don't take the calls seriously.

It took both companies about 6 weeks to call. They both called on the same day. Even though I had set up an arrangement with one of them.

I missed part of my answer. The collection calls started six weeks after I sent my letters. One company emailed me about one week after to let me know that they accepted my offer to pay principal only and agreed to the dates I wanted to pay. However, now they seem to have no memory of that.
