So I have loans with 3 companies, (2 illegal, 1 overpaid) and I've started the process with closing the account and sending the letters.

So I sent the letters via certified mail last Tuesday, same day I put my account on credit-only. I emailed the letters to every email addy I could find for the companies on Wednesday. And, having heard nothing so far, first thing this morning I faxed those same letters to all three companies at the fax numbers listed on their websites (in the case of one, I faxed to both customer service and collections).

I'm a bit surprised not to have heard ANY response from any of these companies yet... not even a "you're wrong, you owe us money now pay up". I haven't gotten return receipts from the post office, either.

I haven't actually defaulted on any of them yet; the next payday withdrawal was scheduled for the 15th. Could this be why I haven't gotten any responses, angry or otherwise? I guess I should expect the poo to hit the fan on Thursday and Friday, after they find out I was serious about closing the account down?

It's not unusual for them not to respond. They know they are illegal and it would be at their best interest to stay quite. But just keep an eye open, some of these illegal lenders hire collection agencies to pursue the account for them. And, these CAs may also report to the bureaus (ofcourse, illegally) trying to damage your score.

You have overpaid on one, what about the other two? Do you still owe on the principal?
