What can i do to get the irs to work with me?

What can a i do, i owe money to the irs? (large amount) i have tried to get them to accept a payment of $500 monthly but they keep refusing this. I don't know what to do, i work so hard and amtrying to keep my head above water and i'm beginning to think that the irs is going to take every thing i have. Which is not much.
