Now can I use this if it is the original creditor who is calling my job, neighbors, etc. I don't want zero communication, I just want them to communicate via mail or thru my debt consolidation company.

what can be done for protection from these companies that buy very old debts (10 years) and try to collect on them and reage them on credit reorts

Reaging of the debt accounts in order to give it a current look is violation in the FCRA laws. Go, sue the company doing such an illegal activity. The company must pay you for the damages.
