I have seen reference on here to something about when you fax in something to the credit bureaus, they only have 5 days to respond to you. Is this true or not?

The CRA's have 30 days to respond to a dispute generated from a purchased report and 45 days to respond if you are disputing from you free annual report. The only 5 day limit I have ever seen for the CRA's is in the case of a disputed tradeline being re-inserted onto your reports. Per the FCRA, they have 5 days to notify you if a tradeline previously deleted as the result of a dispute is re-inserted into your credit file.
