I do want to pay them but they are refusing to make any payment plan with me so I was thinking about sending them a certified letter with a money order from the postal service and do it that way so they if they cash the money order I can tell them that yeah, you accepted my offer of $50 every two weeks or so until my principle is paid off.

Just send them what amount you can as often as possible. Keep all of your receipts and keep track of what you're paying them.
