A cease and desist letter does no good except the debt passes from one CA to another.
If the company has a legit debt, get it validated and pay the account. It will be the right move in order to improve your credit profile.

I intend to pay what is owed, but not the overchargeson the interest and I don't appreciate receiving emails at work or phone calls at work yelling at me saying "where's my money?" "I'm calling your boss etc." I know that's illegal and won't put up with it.

This is what I have to say in a situation you are in.
You don't have to face regular phone calls from the CA. When they call you next time, say confidently that you are sending a cease and desist letter in which you want to forbid all communication through phone, prefer written communication only. You also intend to see your debt validated by the collection agency so that you become sure about their authorization and make your payments going to the right account. Know the charges allowed in your state and the collection fees. If your debt is not sold to the CA, you can make direct payments to the creditor itself. You won't need to deal with a CA in that case.
