Does it make a difference in helping to fix my credit score, if I pay off debts that have been offered to me as a settlement or should I pay the full amount originally owed?

Are you dealing with the original creditors? If you can pay in full, do so only if the data furnisher will update the tradelines to pays as agreed. Depending on who it is, that may not happed but it never hurts to try. If you are dealing with CA's then try Pay for Deletes.
